The brewing technology of Zhuang people simmering wine is the intangible cultural heritage of Guizhou Province. In late autumn, distilleries in Congjiang County will be busy with brewing. The simmering wine uses glutinous rice as the main raw material, brewing through traditional techniques such as rice steaming, drying, mixing, fermentation, storage and cellar.
