Geda Noodles is a local snack of Shaanxi province. It is believed that Geda Noodles was invented by a worker named Li Shansi at a restaurant called Yuelai Restaurant in Sanyuan county, Shaanxi province in Qing Dynasty (1644-1911). Geda Noodles come standard with three lumps of noodles, a small bowl of minced meat sauce, a small bowl of sour soup, and a small dish of chili oil.
This food is to be eaten in a certain prescribed way: you are offered a small bowl of sour soup before eating the noodles, which is referred to as "drinking some soup to get ready for the real delicious food." If the noodles are to be eaten in soup, pour the minced meat sauce and then the sour soup on the noodles in the bowl; if they are to be eaten dry, use the chopsticks to pick up some noodles and drop them into the sour soup to warm the noodles and put them back to the original bowl. Then pour some of the minced meat sauce on the noodles.
